Frequently Asked Questions : Pork

I cooked two large hams and put them in the refrigerator at 2:00 pm. At 10:00 pm, I checked them and found the hams to be still warm. These are to be served at a community dinner tomorrow night. Are they safe to serve?
Recommendation is not to serve the hams. They have been at too warm a temperature for over two hours. Large cuts of meat such as these hams should be cooked to the proper temperature of doneness (140 F /60 C), sliced and then stored in the refrigerator. In this way, the meat will cool to refrigeration temperature quickly.
