I want to stuff my turkey ahead of time. Can I do it the night before?
No, do not stuff the turkey and store it before cooking. Cook the turkey immediately after stuffing. The stuffing can be prepared ahead of time. Keep wet and dry ingredients separated and refrigerate. Combine the wet and dry ingredients just before stuffing the turkey. Also, it is important to use a food thermometer to ensure the turkey and stuffing is thoroughly cooked. The turkey, at the innermost part of the thigh must have reached a temperature of 180 F (82 C) and the stuffing, when tested in the centre, must be 165 F (74 C). Make sure the stuffing has reached that temperature.

The safest way to cook stuffing is in a casserole in a 325 F oven. Again, the internal temperature of the stuffing must reach 165 F (74 C).
